They craft their own infusions, tinctures, flavored syrups and ginger beer; squeeze lemon, lime, orange and grapefruit juices by hand and pour fresh soda from small bottles instead of soda guns. Signs of the Times

With its combination of color, zipping message boards and massive TV screens, Times Square is quite a sight. Dubbed the 'Great White Way' after its bright lights, New York's glittery crossroads underwent a major cleanup operation in the early 90's. This change resulted in the New Victory theatre, New York's first theatre for kids and families and the drastic renovation of several historic theatres, including the Apollo, Selwyn and the New Amsterdam. Today, the world's most famous theatre district includes 40 theaters featuring 22 landmark Broadway theaters and attracts up to a million people every New Year's Eve to watch the famous ball-drop.

Village People

One of NYC's most popular neighborhoods, Greenwich Village (The Village) is a world renowned symbol for everything creative, rebellious and bohemian. Its reputation traces back to the 1900's when artists and writers moved in, followed by jazz musicians who played at the famous Blue Note and Village Vanguard. Legendary artists like Jimi Hendrix lived here and the Rolling Stones recorded here too. Although today no starving artists could afford to live here, the vibe still lingers on its historic sites, curious shops, cafes, bars, and at Washington Square Park, the most crowded recreational space in the world. Streets here run at all angles so hang on to that map.

No Torch-Passing

The most enduring symbol of New York City and the USA, The Statue of Liberty, has been standing 151 feet tall since 1886. This statuesque lady was designated a National Monument in 1924 and received an extreme makeover in 1986, restoring her original beauty and youthfulness for her sweet centennial. Get there via a 15-minute ferry ride departing from New Jersey's Liberty Park and from lower Manhattan's Castle Clinton in Battery Park. Security is tight so leave your back packs and travel light. Admission starts at $4.00 for children 4 to 12. Open daily except December 25 from 9:30 a.m. - 5:00 p.m. Phone: (212) 269-5755

Ear Poppin'

New York's original skyline symbol, the Empire State Building, is a limestone classic built in just 410 days during the depths of the Depression. Standing 102-stories and 1454 feet above 5th Ave and 34th St., it's on the site of the original Waldorf-Astoria. High-speed, automatic elevators will take you to the building's "high point" - the spectacular 360-degree view of the Big Apple and the metro area from the 86th floor observatory. Audio tours are available as well as high-powered binoculars, restaurants and shops. Save time and bypass the line (but not security!) by purchasing your tickets online at www.esbnyc.com. Admission starts at $10 for children 6-11. Open daily from 8:00 a.m. to Midnight.

Deli-cious

Known for having the best pastrami on earth, Katz Deli has been serving great hot dogs, brisket and corned beef and since 1888. Frequented by regulars who have been eating there for decades, tourists and the occasional celebrity, Katz is not only famous for its food - the famous "faking it" scene in "When Harry Met Sally" was filmed here and this is also where Johnny Depp meets with his FBI contact in "Donnie Brasco". Open daily from 8:00 a.m. and until 10:00 p.m. Sunday - Tuesday; 11:00 p.m. on Wednesday, 12:00 a.m. on Thursday and 3:00 a.m. Friday and Saturday. 205 E. Houston St. Phone: 1-800-4HOTDOG

Big Time

Everything's huge in the Big Apple and at Carmine's portions are massive and equally enormous on flavor. One of NYC's most popular restaurants, Carmine's serves affordable and delicious Italian meals like fried calamari, linguine with white clam sauce, chicken scarpariello and veal parmigiana. Even though the dining room is gigantic, it gets packed so arrive early or make reservations, otherwise you'll be waiting for an hour or 2, even though it's definitely worth the wait. Open Tuesday - Saturday from 11:30 a.m. - midnight and Sunday - Monday from 11:30 a.m. - 11:00 p.m. On 2450 Broadway between 90th and 91st St. (212) 362-2200 and 200 W. 44th St., between Broadway and 8th Ave. Phone: (212) 221-3800

Le Fabulous

A chic French brasserie bustling with beautiful people, Balthazar is appealing to both the eyes and the stomach. This SoHo bistro with signature leather banquettes, aged mirrors and 27-foot bar serves savory French specialties like warm goat cheese and caramelized onion tart and duck shepherd's pie. Balthazar's wine list features over 300 wines from country table wines to the great growths of Bordeaux and the Grand Crus of Burgundy. Breakfast is also served and the weekend brunches are very popular. Reservations are suggested. Open daily from 7:30 a.m. - 12:00 a.m. Monday - Thursday and Friday - Sunday until 2:00 a.m. On 80 Spring St. between Broadway and Crosby St. Phone: (212) 965-1414

Pizza Hot

No pizza compares to New York pizza and if you want a taste of New York's best, visit Patsy's Pizza. Open since 1932, this East Harlem landmark is considered a New York classic and it was the first to use a coal-fired pizza oven, the key to baking the perfect crust. Today, it's illegal to build coal-brick ovens, which is why most attempts at making the perfect pizza fail. With its thin and crispy, yet chewy crust, fresh homemade tomato sauce and mozzarella, wide variety of high quality traditional toppings -at just $1.50 a slice- you might just end up wolfing down a whole pie. On 2287 First Ave. Phone: (212) 534-9783

Top Dog

The #1 rated hot dog in New York, according to Food and Wine Magazine, is at Gray's Papaya. Their famous slim and snappy dogs served on a toasted bun are addictive and you can easily binge at just 95 cents a wiener. Top them with onions, sauerkraut, ketchup and/or mustard and wash them down with the Papaya smoothie - it's allegedly known to have rejuvenating properties so you'll gain weight and lose years. Open 24 hours a day. On 2090 Broadway (at 71st St.). Phone: (212) 799-0243
